Box, Papers, Warranty...an I missing anything?

Below is a pic of everything I received with my new "K" series DD, model 118238. I seem to remember seeing a bigger Service manual before it was sent to RSC for the new dial, so RSC must have replaced it with the thinner one in the pic. Anyway, here's the list...
-Watch/Box (Inner & Outer)
-Hang Tag & Green tag w/barcode
-Warranty & warranty holder
-Factory Service Booklet
-Note pad holder and 2 note pads
-3 different polishing cloths
-Suade watch pouch
-Green plastic "winder" reminder

Anything missing or out of the ordinary?

Looks pretty complete to me (now that you mentioned that the outer packaging is also present).

But I seem to be missing "The Rolex Day-Date" and "Your Rolex Oyster" booklets?

The (service) pouch is an extra bonus! Nice one!

Hmmm...I only saw the watch/paperwork once before it was shipped to RSC, but I do remember seeing larger booklets. I was more concerned with the watch itself and didn't inspect the booklets.
Any idea why RSC or JE Caldwell would have removed them.

No idea, but I would just call RSC or JE Caldwell and ask them to send the booklets to you. It is not as if it were a big deal, but I believe those booklets should be part of the package.

I have several Rolex watches that have undergone service, they typically tell you not to send any manuals, boxes or other miscellaneous materials. They do want the warranty card if it is a warranty repair (but really only want the watch). They usually don't want the liability. I don't see the Rolex anchor or, the rolex 'baby' spoon, were those omitted?
