Beef lovers: there is Rib Eye, dry aged, Tomahawk...and then, THIS

First, background. As my son is still in vacation but my daughter is back in school, my lovely girl and myself drive back while mom and son stayed at the beach (tough life, I know).

We had enjoyed all week by ourselves but mi girl is already a teenager, so she has plans for Friday. She is a good girl and has already asked other parents to pick her up and bring her back home, so I will not be driving!!!!

That is great BUT that means I am having dinner....solo!

Two options: go out or cook in house. It is a beautiful spring evening, just a bit on the warmer side; so grill is a must.

I like food. I love beef. There is fantastic beef....ribeye, tomahawk, steaks, dry aged....but there is one DECADENT recipe that is extremely easy to make yet it is charged as premium (HIGH premium) and available only at the best places.

...so, why dinner alone? Let me bring my virtual family along!!!!!!

Shall we?

What’s that aroma I sense?

Could it be Arracheras?

Or Carne Asada? Hmmm..

A great -and very close- guess! Arrachera (skirt steak) is a true delicacy, but for tonight, i asked for the REAL deal: OUTSIDE arrachera. See, skirt steak as served in restaurants is INSIDE skirt steak. Nice and juicy. But outside is just mind blowing! Hence it’s price, can go for twice the price and in the neighborhood of aged ribeye

OK, my mouth is watering already Gerardo! Please hurry.
I love bone marrow and Arrachera. I can't say I have had Outside Arrachera, so will need to compare notes in Vegas.

We will only need salt and pepper. That’s it.
That on the back is grilled salsa, which I make weekly.
