Why do you care if it’s the “most coveted”? The most coveted watches are also the most expensive on the secondary marketed. Indeed, there is a direct relationship between how coveted it is and what it costs.

The most coveted will be the daytona.....the cheapest that is fairly popular will be white op39...

Cheapest and most coveted does not belong in the same category...this will only apply to Patek nautilus at AD.

Welcome to TRF

If I can make a suggestion, the best way to start out is to visit a dealer in person, try out the models that get your attention, and go for the one that you feel both wears the best and suits your budget.

Rolex, is a great brand, but certainly not the only one so make this a great experience rather than a rushed decision.

Sounds like you're just buying any Rolex just to have a Rolex. I get it, but don't do that. First, figure out what is your maximum budget for the watch. Second, shop around for any watch, in your case a Rolex that sings to you within your maximum budget. Lastly, enjoy the watch as long as you can and may be upgrade along the way.

Coveted in the general population, I would always say sub and datejust. Coveted by collectors, no date sub, Daytona ceramic and day-date. Out of all of those, I would go with the datejust 36 or 41 depending on your wrist size. 41 with smooth bezel, or 36 with fluted as the fluted is more coveted, as long as your wrist is not too large. That is the least expensive out of all of those, but get an iconic watch. Will cost you mid 7-8k if you consider that cheap.
