I'm not trying to learn watchmaking etc but wondered if there are any good books out there on the movement working, design building etc

What I meant was I'm not trying to train myself to work on watches more understand the workings and design process/execution

I currently only have The Theory of Horology, which is great for learning how certain mechanisms and complications work. I think it's both suited for me as watchmaking student or for a watch-nut who wants to understand watchmaking.
It's available in English, German and French, I needed both English and German for school.

Henry Fried's The watch repairers manual is basically the bible to learn from Also DeCarle's Watch repair manual is good. Rik
