Please could you advise if its advantageous buying a Rolex in the Channel Islands apart from the obvious?

I can't see it being any different to taking a short flight from Heathrow outside the EU. Plenty of cheap flights around but be sure to contact the Rolex AD to be sure they have what you're looking for in stock.
