What Brand of Knives are in Your Kitchen?

So I asked this question into the discussion on another thread. (below)

After a lot of reading, testing and learning about knives, We final settled on 7 Piece Global Sai Knife Set. http://global-knife.com/

We definitely need to add the steak knives and will likely switch out a few and add a few more. Very happy with the style, weight, balance and overall look for the knives!

Thanks to everyone who gave me previous suggestions!

We use CUTCO. Free sharpening for life. We sent all out knives off to be sharpened while on vacation. It's a nice perk, but the more I've been thinking about it, it's more a marketing gimmick as knives aren't that hard to sharpen, except maybe serrated knives.

I have a whole bunch of knives, but I can't show them, even though some are kept in kitchen drawers--Buck, Cold Steel, KA-Bar, etc.

Believe it or not, I'm using Ginsu or Miracle Blade or some such "as seen on tv" brands. Bought them at the county fair, lol! They've been terrific. Hold an edge, never need sharpening. Have zero complaints after 6-7 years. Lifetime replacement, though I've long ago lost the info on how to claim that. Oh well, for the $40 the whole set, including steak knives and block cost me, I'll just buy another. Throw them in the dishwasher. I've had expensive knives like Henkel, but those days are over. Admittedly I'm not a gourmet.

Rockstead are fabulous, expensive as hell, have a look at the tests on YouTube Grady.

It was the mirror polish that got me. I originally ordered my Rockstead Shu in March of this year. It was a bit unfortunate that their next production run for this particular knife wasn't until August, but I was willing to wait.

I've gone from Henckels to Shun. The Shun's stay sharp longer and respond to a honing steel better. Great balance. All around great cutlery.

We had J. A. Henckels before this too. Had to sharpen a lot. We looked at Shun too they are very nice as well!

The Shun's were a bit pricey when I first looked at them, but I read a good review a few years ago that spoke well of the steel and their durability, so I tried an 8" chef's knife. It was superb. I've added a piece at a time over the last few years until they are now the only prep knives I use.

I've got the same as you mate. But haven't got the two small ones
Mine stick to a generic £10 magnetic upright board

These blades are awesome. User mine daily for over 10 years now....

Nice! I think we are going to get a different block as my Wife does not care for the high-tech looking one it came with. Magnet board won't work in our kitchen set-up but it is great option. Can't wait to start sing them!

Another big fan of Cutco here. Those are awesome knives. It would be better if they were forged, instead of stamped metal, but still very good.

The only two knives needed is a chef's knife and a bread knife. All those "sets" basically have two useful knives in them.

I also like a wide paring knife and a cleaver for skinning and butchering whole animals. I use a custom made hallaf for dispatching livestock.

This is my philosophy as well but you do need a set of steak knives. I've used a Shun Classic Santoku knife and bread knife for over 10 years. They are best bang for your buck IMO and will probably last a lifetime. Knives can get expensive if you start looking at higher end Japanese brands or custom.

Really old Henckel Professional set. I like to sharpen before use so I like my old set.

I have a Chris Reeve Sikayo.

I also have a Wicked Edge for sharpening, which is awesome once you learn how to use it properly (which takes a lot of practice on cheap knives you don't mind ruining).
