Sub SS 16610, Sub 16610LV or GMT II 16710T Pepsi for everyday wear ???

I currently own sub 16610 two tone blue, and 16013 two tone 18k, but I don't feel comfortable with these for everyday wear. Especially right now after biking 15 miles. Now I'm sitting at a restaurant writing this post.

Agreed. But I think the gmt wins out with the complication and versatility (changing inserts/bracelet etc).
