Lets share a simple Mexican recipe with TRF

Good morning TRF! In words of Auguste Gusteau (Disney's Ratatouille) 'Everyone can cook' so why not sharing a simple local recipe with my virtual family?

The dish: Migas con Huevo. This is a traditional breakfast from the north east part of Mexico, very easy to prepare, so go into the kitchen and fix this.

Ingredients: corn tortillas, onion, tomamto, eggs, oil and pepper (I like Serrano or Jalapeno; if you are into spices, if not, do not add this). Salt and pepper.

PLEASE do NOT use canned products!

In a pan, over low heat, add oil and, once this is hot, add onion

After a short time, onion will turn translucent (not even a minute) add tomato and pepper

Tomato will release a lot of liquid, let it reduce (evaporate) over low heat to concentrate flavors. Add salt and pepper.

Mix them with the sauce and turn the heat to medium high. Spread over the pan. What we want is to have the tortilla soak on the sauce but also be crisp because of the oil (crunchy)

Let tortillas and sauce sit, do not keep moving as you will get a big mess (tortillas will break)

Left the upper part as you want this. The semi burnt is tomato and adds flavor.

Turn heat to low and add eggs. Just break them and let cook. Do NOT stir, this is not scrambled eggs!

Use a spatula to turn uncooked part (top) to the bottom. Not everything together as a big omelette, but in sections/parts. When egg is cooked, serve. Sides can be refried beans, avocado and/or some more pepper!
