Anyone from down under?

I’m hoping there’s a few of you on here who can maybe offer some suggestions.

We’re planning on taking a trip in January next year or January 2020. Our itinerary involves 3 nights in Hong Kong, then a flight to Brisbane ending with a two week cruise from Sydney to NZ. It’s me, my wife, daughter who will be 3 and mother in law.

The bit I’d like suggestions on is this. Upon landing in Brisbane we will hire a car and head to Hervey Bay to see wife’s family. Two or three nights. We’ve then got just over two weeks to get to Sydney. We’d like to stop at Noosa for a couple of nights to see friends, see Australia zoo and Brisbane. Any places you’d recommend seeing whilst heading south? Our plan is to stop for a night or two along the way so our daughter isn’t in a car all the time.
