One has a date (16610) and one does not (14060m).

The 14060M is a Submariner that does not have the date feature!!!

What is the best way to make sure it is not a fake? At a glance? Date magnifacation font on dates? Bracelet weight?

I am planing on geting one tomorow but the guy owns a Pawn shop and thats how he got it. It's a 2000 with date. Do these pawn shop guys know what they are doing to ensure they are not buying or selling fake rolex,s Am i protected it is a brick and mortar store.

Not necessarily. Most pawn shops will have the watch authenticated but that's up to the shop and law varies from state to state.
I would make sure you have a written return policy to allow you time to get it checked out.
Since it's 2000 model, it would not have laser etched crown on the crystal.
