For me there are too many to narrow to just one. Love your Datograph pick though.

AP RO Open-worked
Lange Datograph Up/Down

and slightly behind those would be the Platona. Honestly I'd be thrilled owning any and all.

Now for completely out of touch grails I'll never own:
Rolex Day Date TEM
Richard Millie (pretty much any reference)
Any Patek or Lange double split chronograph
Patek Grand Complications 5327

5270P wasn’t as good on the wrist as expected. I’d go Lange datograph perpetual over the 5270p. Or even the 3970.
