Frozen burgers
We’re feeding the landscapers tonight and noticed something… are 8 frozen sirloin burgers supposed to be $16 ? These prices could result in fewer Rolexeses this month!!!!!!

I respect my help and always offer exotic proteins. We use the leftovers from my personalized shell cordovan watch straps. After being cut aged and dyed there’s plenty of horse sausage left. It’s good eating if you’ve ever been to France.

If you have to ask....
We use three different meats, including 40-day dry-aged, we grind here. And yes it is.... . . . But what about French fries? See, too many forget about the art of making truly great fries. jmho

Thank my Muse, she found the recipe. It really is seriously good.
1/3 each of NY sirloin, short ribs, and brisket. It's up to you what % to mix in with dry aged, or none at all as it's still a tasty burger imho. Cooking I like to start the burger when the freshly ground meat is ~65f. Place on BBQ cast iron plate @ 525f for 45 seconds per side. Move burgers to 600f grate, ~35-45 seconds per side TWICE, rotating burger to get the crisscross pattern. .... Internal burger temp around ~125-ish depending on your done-ness target but think UNDERCOOK internal a bit (NOTE: Outside temp is darn hot and so....) Let burger rest for ~3 minutes!!!!!!! Do not pass go. Do not collect $200. Enjoy. Oh, and don't forget smoking a bit of your fave wood for added flavor.

Ya got me. I don't pay much attention to what's in my freezer. Just the ice. Kurt, our 2nd kitchen butler, always carefully sorts and stacks my ice bin just so. Always perfect. Got the idea from Annenberg's butler, back in the Triangle Publications days. He used to place potato chips in a bowl one at a time. Perfection. So now my guy does it with the ice cubes.
Landscapers? Trader Joe's 80/20 vacuum-sealed packets. $5/each. Eight of those, eight big slabs on the grille, and break them in half for the meat sandwich. On square white bread, of course. With only salt and pepper. Salt. And. Pepper. |

The way food is frozen now does not ruin it like yesteryear. They have flash-freezing that does a better job. I actually like frozen burgers, and that price sounds about right, but frozen tends to mean high salt content.

How much do the burgers weigh? Our local butcher grinds his own ground chuck. 4 burgers to a package, either fresh, or from his freezer. Three months ago, the price was about $5 for the package with a discount for larger purchase. So, about $1.25 a quarter pound burger. But I am sure the price has gone up. I applaud you for cooking burgers for your landscapers.

The average price for a burger at a dine-in bar or restaurant in my neighborhood is about $20 now — $18 or $19 is typical. $15 would be a good deal. That used to be a price you paid at a 5 star hotel or resort.

The best burger I've ever eaten was in Scottsdale, the Fashion Square lower level, in maybe 2002? It was $15 (twenty years ago) with amazing chips fresh-made. They did more than merely brush the roll with butter and stick it under the broiler, but when I went back a few years later, the place had closed.
