What should I add next

I was lucky enough to collect these three great watches what you guys think I should ask for next to add to the collection, I am in no rush now so I can wait for any new piece indefinitely

What you add next is your choice and nobody else's. If you are not sure, it won't hurt to wait with such a nice collection already at your disposal.

Agree 100% , I am thinking of Arabic numeral day date but that going to be a very hard one to get ( no rush :) )

Not really, I am more than happy with my collection didn’t ever dream to have these three before. It’s not bad to put your name for another watch since they take ages to come , my next one has to be something different maybe day date on PM watch

Imo every Rolex collection needs a steel backbone of the core 3 models (sub-gmt-daytona). You've accomplished that.
Now it's time to move to precious metals.
I agree with daydate, but try to get a unique one with a special dial.

Day-Date or PM Sky-Dweller. Size choice depends on your wrist size. Platinum or WG would be great, IMO.
