Anti-clockwise setting of time. Is this correct?

Would my thinking be correct that there are certain Rolex models where time is set (forward) by turning the crown downwards (i.e. towards 6), such as the Yachtmaster? My experience up to this point had been upward turning (i.e. toward 12) to progress the time forward.

Depends on the movement, not the watch. Yachtmasters have the same movement as Sub Dates and DJ's

The older 30xx movements were counterclockwise.

The 31xx changed to clockwise

The newest 32xx have gone back to counterclockwise

Yes. There are more than a few models where you turn the crown counter clockwise to advance the time.
