All aviation weather reports are reported in ‘Zulu’ (UTC) time. I don’t want to do lots of mental math when I see an inflight time stamp of 1420Z, I just want to glance at my watch and see ‘oh that report is 20 minutes old.’
So: can you help me winnow this down? Who makes both UTC and stopwatch in a self-winding, legacy-grade watch? I really wanted to love that Patek Calatrava Pilot, but... no chrono...

A chronograph is a watch with the additional stop watch function. A chronometer is a watch who's movement has been tested by COSC, the Official Swiss Chronometer Testing Institute.

Not sure what your definition of "legacy watch" is, but I know Breitling has some GMT chronos.

I would humbly point you towards the excellent German brand Sinn.

Post number 3 in this thread has a Sinn 757 UTC, which is both a chronograph with 30 minute and 12 hr counters and a 60 minute countdown bezel.

You also mentioned a preference for ‘tool’ watches, and Sinn has this in spades between specially hardened cases, -45/+80 degC rating, moisture-capturing capsule, etc, etc. Oh, and they are reasonably priced, and originally founded by a pilot.

Check, I had sensed some criticism re all the IWC LEs these days which I'd have shared. Still like the XII and the XV very much though and the XV on pyramid bracelet remains my preferred tool watch for when I don't want to worry about scratches or dings.
