Looks like you’re gravitating towards the big star power watches, so a great but humble Sub or Datejust may not prove to be the most natural end to that story. I would look for a Day Date

Six is a good number though. I’ve accidentally ended up doing some major overhaul in my collection currently as a product of getting a few very special „calls“. Taking that as an opportunity to go down to 7, so same range ultimately.

You've clearly bought a ticket to hype bus, so buy the most popular version and enjoy the ride.

But, if i was in your position, I'd take a look at another brand, you seem to be well covered for Rolex sports watches.
