I go along with Rolex, the company, who use the word (Rolex) in singular & plural
form.

I always use Rolexes because of the extra syllable in pronunciation. However, because it's a proper noun but not listed in the OED, there's unlikely to be a "correct" way of using the plural. The conventions for plurals originate with the grammatical features of the source language - much of English is made up of other European languages - so it's really a moot point. Interesting, though.
