Best of all, it is simple, and ingredients can be found anywhere! You do not need fresh tortillas. The story behind the dish was to make breakfast in towns away fron the city with whatever ingredients they had, including left over tortillas that could not be reheated, so instead of throwing away, they added torn tortillas to onion and tomato, plus some eggs and....breakfast is served!

That brings back memories of my mom making those on Sunday morning. She did green and red bell peppers (probably for our gringoized tastes) but added a bit of mild chorizo.
I think I have to make those this weekend!

You can add as many ingredients as you wish; the basic concept is this, once again, think about small towns 40 years ago, tomato, onion, eggs and tortilla (back in the day, lard was used; the flavor is OUTSTANDING!). Bell peppers would add a nice, fresh taste to it. |
