A chapter ring is a real term, although he didn’t use it right. It refers to either the hour and minute track on the dial or to the rehaut. The former meaning is likely more correct.

For some reason the DD has always been my idea of the top of the heap. I prefer the de-constructed Romans fwiw.

Having said that, the longer I’m in this game the more I realize, that for me, there’s no such thing as a grail.

As much as I love Rolex, my grail is a Patek.

Out of your list, I'd go DD40 with stick dial.

Having never owned a DD I’m wondering if not having any adjustability would eventually wear on me?

One of the reasons I went with the RG Daytona
