Wearing a grand seiko today and just got done doing a reverse sere tri tip on my Yoder and egg, but the XS takes phenomenal pictures or my watches. The colors pop so much more than my X. I’m thinking my X camera was defective maybe.

It was a few days ago, I believe it was bone in NY Strip cooked to 135. That Weber a super hot grill it has their "sear burners" gets to pre-heat in about 5 minutes, shocked at how quick the steak got to 135 degrees, maybe 7 minutes but still cooks like a weber compared to a really hot infrared type of grill which I used to use with mixed results.

The weber spirit at the bay house takes about 10 minutes and the genesis II without sear burners takes maybe 7 minutes to pre-heat to 500. I also have a Weber Smokey Mountain which I love, some big chunks some small chunks, some water and charcoal and it holds heat really well and tastes great. Beautiful watch, nice shot. I'm coming from an SE and the camera is so much better. Screen on the Max is huge as well, still getting used to it.

There's nothing like a good steak on the BBQ, and it's good to hear another BBQ chef cooking the old fashioned way. It seems everyone I know is into the reverse sear technique, but I don't like it. The fat doesn't render properly and makes the steak taste odd.

I like to cook over coals, so use a Webber kettle. I did a couple of 1kg Cote de boeuf a couple of nights back (that's 2.2lb Prime rib for our American friends). I use Grill Grates to sear, and then a slow heat to temp while I try and contain the grease fire the Grill Grates create. They're a great invention for coal grills, but at the temperatures I like they cause a few flare ups.

The Smoky Mountain smokers are great. A friend made a smoker out of a 55gal barrel, but it's just a mass of rust holes now. I told him he should just buy the Webber and be done with it.

Was out in Dublin the other week with a friend who has had all the iPhone's. He stood in the middle of the bar and I took a photo of him on both devices at the same time, both on portrait mode, iPhone X vs Pixel XL 2.

My Pixel XL 2 took a decent almost professional looking photo of him, his iPhone X on "auto" mode same as my Pixel XL 2 made him look like a ghost. We tried it several times, he even swapped places and took the photo's himself with the same results.

Would be interesting to do the same with the new XS.
