castor sugar is a refined white sugar....quite a small grain. I think theuy call it Superfine in the US.

Double cream is cream with min 48% milk fats...thick and can be easily whipped, in the US you want heavy whipping cream or even better extra heavy cream!!!!!

You want double the volume of whipped cream to cheese!
