Selling my old piece and getting a new watch!

Hi Guys and Gals,
As I am only a beginner in watch collecting, I just need some friendly advice!
I am thinking about getting a Submariner as I am starting to admire how gorgeous it looks through the shop window and the watch looks amazing on my wrist. I am still not certain which one to go for especially the price difference between the ND sub and ceramic sub is more than £1000. Just wonder what is the advantage of the ceramic bezel? I am not to bother with the date function!

I am thinking about selling my late 60s ss oysterdate model 1501 to fund this purchase. How much should I expect an authorised dealer will offer me? The watch had just been service by Rolex which include an overhaul and new crown. So I got the receipt but no box and papers!
