Some Cheese with that wine...

Hi guys,

I have a little question, hoping to inquire and get some information on cheese. There are only a small handful of ordinary cheeses that i like. My favorite is a sharp yellow cheddar. If you've ever eaten a sharp cheddar with sweet, Honeycrisp and in-season ripe apples you'll know why. I like a nice swiss, mozzarella, Colby-jack, parmesan. The "fragrant" cheeses i have a problem with. But there is one cheese i'm keen on trying.

Mimolette. I've done my bit of reading. I find this cheese interesting and would like to try it. I've found a place where i can buy online, but not in town anywhere.

My question is that who's tried this cheese and could you describe it? I don't drink wine regularly, but i'd also like to inquire what wine would go good with Mimolette? I've read that dark ales are good with this and bourbon and scotch beer. Don't know about that, but i'd me more accustomed to a bourbon or scotch accompanied with the cheese.
