Made Gumbo for the first time Tonight
So tonight I made Gumbo for the first time. I understand that Gumbo recipes are very contentious and highly personal with many regional variations.
There are two major types: Chicken and Sausage vs Seafood. I was inspired to give this a try because I read on a forum that jarred roux is a great alternative to homemade stove top roux and that rotisserie chicken works great. I am always looking for recipes that I can use $5 Costco chicken. You can't beat that. I got Savoie's Dark Old Fashioned Roux which is out of Opelousas, Louisiana. Many recommended it. Roux is merely Flour and oil cooked together. I personally don't think there would be any variations between this and homemade. Costco Chicken, the trinity (onion/celery/bell pepper). I used two different varieties of chicken sausage. The store had boudin but it was spicy, so I chose not to use it. My GF doesn't like spicy foods and I didn't want it to be too spicy for her. As Jules says, my girlfriend is a vegetarian so that pretty much makes me a vegetarian. Also added garlic and green onions. The final product. It turned out great! I loved the contrast between the two different types of sausage and the rotisserie chicken which turned out shredded. It was very hearty and flavorful. My GF absolutely loved it. I added a small amount of Tapatio to mine for extra flavor. BTW.. no okra. I would eat fried okra but didn't want to add it to this version. I might add it to a seafood gumbo attempt. I understand that this can be a great point of contention. Best part is there is tons left going into the refrigerator. I think it will be even better tomorrow! !
