Chronometer certifications

Hi, was looking at my Oyster booklet that came with my 1680 and it mentions that watches having the Rolex red seal have been subjected to the official chronometer tests and have passed 360 hours of rigorous trials and quality control in their labs.
My question is, were these tests of approx 14-15 days subjected to every watch as it seems to be or only a select sample out of a lot to certify the lot? Any idea what kind of tests?
