Also, would they state it as pre-owned on the reciept/documentation vs. new? (I'm asking because I planned to get them insured if I do purchase from them and it may cause an issue for me with insurance regarding the documentation.)

None of that will matter for insurance purposes. If you buy then your receipt (or optionally an appraisal) sets the insured value. Cards, papers, etc are meaningless for insurance.
