Need figure out which Rolex to part with

Okay, bear with me. I currently have three Rolexes: a 16700 Pepsi GMT, a 16600 Sea Dweller, and 16610 Submariner Date. I would like to add a s/s Daytona 116520. However, I need to sell either the Sub or the GMT or both. They are both serviced within the last year or so and look great. The Sub is easier to part with because it looks a lot like the Sea Dweller, which I prefer. Figuring out what to do with the GMT is harder. In a perfect world, I would have the GMT, SD, and a Daytona but Daytonas are not cheap and if I sold both the GMT and the Sub, I'm essentially even money into a used Daytona.

I am not asking for a crystal ball on my feelings but what I'm asking is that you, as true aficionados, have a better idea of how special a Pepsi 16700 is and whether or not that's a bad move to part with a great one that I've had for 8 years. Also, if I hold off on getting a Daytona so that I don't have to part with the GMT, are those only going to get more expensive? They don't seem all that hard to find but prices do vary wildly. Thanks in advance.
