Use GMT for tracking time?

This may be a silly question, but what the heck, what are forums for?! I've been planning on buying a ND SubC, but recently have been considering a Pepsi GMT instead. The reasons are purely aesthetic. I love the Pepsi and every time I see one in the wild, I'm drawn to it.

I have a couple of dive watches that I wear fairly often and I use the elapsed time function on them regularly. I have little kids so timing how long they've napped, played at the park, etc is something I do regularly. This is probably a stretch, but is there anyone out there who uses the GMT bezel for elapsed time? Been thinking about how that may work and I'm not sure it's feasible. I'm reaching here!

Any other general opinions regarding 16710 vs 114060?
