Advice and help with 16710

I have a question about a 2007 D-Serial 16710 I am interested in.

This particular piece has the coke bezel and oyster bracelet from factory.

If I were to purchase this watch, I prefer to change the bezel to all black and onto a jubilee.

I plan to take it to Rolex London to get it serviced, would they be able to make these changes?
I don't mind sacrificing the coke bezel and the oyster for these changes, but I preferably wanted a brand new bezel and jubilee.

OR will Rolex only supply a new jubilee bracelet on GMTs that originally came with a jubilee from the factory?

If this is the case, which year/reference GMT should I be looking at that came with the jubilee as standard?
