I have a solution: Get both!
The SS SD for you and the EXP-II for your wife! (You can always borrow hers later! )

The Sub Date has a classic pedigree, but you'll have to decide if you like what Rolex has done since 1985 by adding white gold hour index surrounds on a legendary tool watch. There is a reason why many eschew the modern incarnation of the Sub and buy a vintage Sub instead -- people will pay a premium to get the "real deal" before it was all blinged up.

Further, the Sub Date has a "stigma." Many non WIS buy this watch for "status." It's often called a "Texas Timex" due to its ubiquity. Walk through a mall in any major city and you will see many Subs on bourgeois wrists.

In contrast the white dial Explorer II has several things which I perceive as positives:

1.) Travel functionality. The GMT complication is extremely practical if you travel for work. Keep the 24 hour hand on GMT as a reference. Jump the 12 hour hand back and forth when you traverse time zones.
2.) Ease of readability. The white gold surrounds are painted black so there is less bling and reflection when compared to a black dialed Sub. The contrast of black hands on a white dial makes reading time effortless.
3.) The "smudge" factor. The white dial is much less prone to showing fingerprint smudge on the crystal when compared to the Sub.
4.) Stealth. The Explorer IIs are not very common. People won't peg you as a pretentious poser -- which you might experience with a Sub. A Sub screams Rolex. Explorer II polar does not.
5.) Comfort. Explorer II is lighter and more comfortable on the wrist due to the absence of the diver's extension and a non rotating bezel.
6.) No bezel imprints on your dress shirts due to smooth fixed bezel on the Explorer. In contrast the Sub's ridges will leave marks on your shirt sleeves if accidental pressure is applied to the shirt during the day.
