Red Subs?

Have been intrigued by the Red Sub for a while and I´m going to meet with a guy to check one out.

Just would like to know how rare it actually is, before I make up my mind...

Is it possible to keep the original dial and hand if you need to service it, if not will Rolex replace it with another red dial?
