I don't think getting rid of one Daytona and one GMT of your choice, is cutting things too deep, IMO. I wouldn't go any deeper than that, however.

Buyer's/Seller's remorse? Always a concern. One way to minimize is to consider the deal you're making today, and then thinking if you turned it around, i.e., what if you didn't want the Patek any more and wanted your two Rolexes back? How much, if anything, would you be out of pocket? If you're okay with the answer to those questions, well, you'll probably be fine.
