Although it sounds like the Exp II might compliment your current collection . . . I still vote for the Sub! oh and no date and no COSC!

You have a tough choice to make as all the watches you mentioned are very nice to have. If you plan on eventually having both models then just pick one now and save for the other. I have a GMT Pepsi and a Sub ND and like both of them. My Sub ND is a non-COSC and really like the clean look on the dial. But my everyday watch is my GMT!!!

If you, like me, never dive deeper than 100 meters (I've been down to some 16 meters...) and frequently travels to different time zones get the Explorer II.

If you often dive deeper than 100 meters. Get the Submariner.

If none of the above applies, listen to what the others says... or take the one that looks best to you.

It depends on whether you intend to go skin diving, or cave exploring. I'm sure Rolex will not authorize you to use it for any other purpose.
