Re-reading it again, I think what he's asking is this:
When is it safe to change the date after going past 12 midnight on a quickset watch? If the above question reflects what he is asking, then the answer is this: For any mechanical watches (except Rolex GMT's), a good rule of thumb is to avoid changing the dates between 10pm and 2am. If you are manually setting the date, it's best to go to 6am and manually change the date.
