For the rough and tough stuff, get something like a Casio G-Shock. It's inexpensive, tough as nails and inexpensive should it get damaged or destroyed while working out on the ranch.
Yes, Rolex does make a tough watch, but I often will take it off or not wear it at all that day if I'm doing something that could really give it some abuse. |

So if it must be a Rolex then the Explorer line-up can take some shocks that others might dislike.
If you really expect some big shocks/impacts then maybe a big boy's (case size 45mm) watch like Ball Engineer. Many of them in the Classifieds here: http://www.rolexforums.com/search.php?searchid=6789336 Some have GMT feature, Diver feature, etc. and can take 5,000-7,500 G's
