One Rolex to wear: GMT 16710, SUB ND, AK blue

To solicit some of your most valued opinion:
I want to select and purchase one of those as a daily wearer, pretty much as only watch, besides some cheap fun watches, overseas trash time piece and serious digital info centers;-)).
I love the idea of the GMT functionality as I travel quite a bit, based on the east coast, I'm frequently on the west coast and a couple of times during the year in Europe, with clients from around the world. But I would seek out a 1998 model for esthetic and sentimental reasons. Not too convinced about the current GMTc...
I could easily be persuaded just to go with the simple current SUB ND as it's THE Rolex standby in style (and I don't wear a suite to work) and perfectly simple. And I like the new band and caliber.
But I also love the simplicity of the Air King with the blue dial as a twist.

But, I really don't need the GMT function as I own an iPhone and am pretty good at math (at least in subtracting and adding a couple of hours here and there).
I don't need the dive capability and probably have to come up with a usage for the bezel on the Sub (date is taken care of by my iPhone, thank you). And I feel if I see a Rolex it's always a SUB variation.
And the Air King, well it's somewhat the simpleton of the whole lot.

I do work with a wide swat of people from Main Street to The White House and am looking for a one hit wonder that takes me from beach cocktail to artist black tie (aka I don't have to be fully in compliance...). Something that reliable, stylish but understated, not to flashy, but nice.
I love the older (and smaller) Explorer 1 which could be a contender as well...
What do you collectors, flippers and serious worshipers of Rolex have to say?

I have a subc date and love it, but if you are going one watch only, the GMT and the option to change the look makes a lot of sense to me. And you since you might actually use the GMT function, all the better

For me the sub.

I keep the cellphone on home time (turn off auto time zone feature) and my watch on local...the only time im interested in the home time is when im thinking of contacting someone there via call, text or email....ie phone is in hand for the time
