Thank you. It's the name i think, is what i like about the cheese the most. Mimolette, it sounds cool. From the reading that i have done, the flavor of the cheese can be very nutty, almost like hazel nuts they say. But no less, i'll pick up a reasonable bottle of Chianti(wine isn't my strong point) when id do find a source for mimolette. Provolone is a good one as well. I enjoy that melted on pepperoni more than mozzarella. And a nice, sharp chunk of cheddar with small, cold Jonathan Apples is the way to go.
