Gerardo. Have been experimenting myself with make at home. There are definitely some little secrets when making the dressing to get the right consistency. The waiter at our favorite place has been giving me a few tips like using a small amount of fresh ground sea salt and pepper to help puree the garlic and anchovy with a fork/spoon combination. Another is to slowly drizzle in the olive oil while creating the emulsion after adding the egg yolk. I'm still a long way away but trying. If you have some tips I'd be happy to hear them. Maybe it's time for you to do a short video

Since this seems to be a dying art in the hospitality business and based on replies from here and other friends I thought I would start a list. If you're a member here who travels regularly or occasionally for vacations you may want to try some of these places and enjoy an old time traditional real Caesar salad.
