Yes, I confess, I use a 2-minute timer even when steeping a cup of tea!

Do you high heat sear and move to lower heat to finish? I always did and saw a pro that did it the other way around. I tried it and it was awesome. Medium low heat until about done and then over to high heat to finish to sear.

Blew my mind.

I have not done reverse sear in quite some time, should do it shain. I agree, it is VERY good.

Cooking at home is....well....fun to say the least. When we do steak, my wife likes fillet, daughter skirt steak, son ribeye....then add sides (garlic, corn, potatoes or something else) so I get to play with options

We’re going with Parmesan crusted tbone and filet for dinner tonight. Have ice and snow on the grill so will have to do the oven and stovetop so no reverse sear for us today.
