I will also note that in response to a couple questions above... they offered to do this at no cost, so I would not be keeping the other dial/hands. BUT if I wanted to buy them I could (it was around $500) thereby giving myself the chance to swap them back and forth when I want. Though I'm pretty much in love with the polar dial, so I don't think I'm interested in changing any time soon. If I changed my mind in a few years, then I could just buy one then!

I don't think there's any harm in letting them change it out for you. I really don't see any downside.
That said, I would buy the black one now and then get the white one when it comes in. Let's face it, you're going to need both at some point. |

anytime a watch is opened there is risk. Maybe very low, but still there. A particle of dust could attach to the inside of the crystal. That sort of thing. I would wait for the one you want.
