Regardless of brand, i tend to think given i have the funds, id get the more expenive ONE first then get the cheaper ones to supplement in the future
Harder to save up 10k for the next watch rather than two increments of 5k

Go with the DJ41 blue fluted jubilee (or smooth if funds are limited), and you will never regret it. DJ is an iconic Rolex model suitable as a dress, and sport watch. DJ better than Sub or GMT as first watch in a collection, or as an only one watch for a person who also needs his watch to be suitable as a dress, and occasions watch in addition to sport all rounder. Buy it from an AD to establish history, then after a while visit and put your name on the waiting list for a Sub, or GMT. If you have a collection of 3 Rolex. DJ, Sub, GMT you've done well. After that you can branch out to other brands like Omega, IWC, if you want. This is how I would do it. Important note: before you start up with this collecting thing I suggest you sit with yourself and think of what you are embarking on thoroughly. This is an ADDICTION. You will never recover unless you have a very strong will.
