Blue is the number 1 favourite colour worldwide. In the watch world, I think blue stands a good chance to be just as classic as black and white/cream/silver.

I think blue is a safe color and has and will stand the test of time. I think unique pieces with blue dials will do fine but a run of the mill Datejust will be just that.
Every time I see a blue faced watch I think of a Seiko. I don’t know when or where my brain made that association but it’s stuck with me and I don’t particularly like a blue faced watch. I do like the ice blue color on the platinum offerings.

I think the classic blue Rolex dial is a timeless color.
The green dials so popular today, not so much.

I've always loved the blue face watches and am in the market for the two-tone Submariner with the blue dial. One of my favorite watches is a blue faced Tag Heuer diver that I bought about 20 years ago - still love it.
