All interesting questions.
Maybe Rolex decided at some point that a flat cyclops crystal was strong enough for the 660 ft depth rating of a Submariner but not for the 2,000 ft depth rating of a Sea Dweller. I think they're just design differences over time. The most modern Sea Dweller comes with a flat sapphire cyclops crystal... |

Your grandpas Sub (I'm guessing thats his 5512 you posted) was made from 1959 to 1978. In that time Rolex didnt use sapphire crystals for their Subs. They used domed plexiglass. Sapphire crystals for no-date Subs came later on.
