Cam anyone tell me if all Datejust 41 have interchangeable dials?

Yes AFAIK but they are not easy to get. Years ago, 1990s my Rolex AD would get any DJ 36 dial for me I wanted (except jeweled) for $150 from the Rolex center in NY.

To change dials via the RSC, your watch must be past five years old (out of warranty) and the dial you seek must have been an option on your watch reference. I’m guessing it’s exchange too, you won’t get to keep your old dial. Rolex does not like loose parts being sold.
