Taking my phone out of pocket frequently to tell time drives me crazy, but I find the lower frequency of needing to know the date is perfectly suitable for getting out my phone (or, when applicable, glancing at my laptop.) Regarding your point about taking your phones out of your pocket, I feel the same way.

The less I can interact with my phone the better!

I actually prefer non-date watches only because of the lower complexity of the movement. If I have a no-date watch that's been a bit out of rotation I just need to set the time and then go! The aesthetics aren't as much of a factor for me.
