Alex,
Larry (Tools) did an excellent job of explaining the differences in our reference library. Take a look here: http://www.rolexforums.com/showthread.php?t=31386

There are several different models of each, so it is difficult to explain very succinctly. However, between my 2 models:
16700 - GMT Master = Quickset date, but hour/24 hour hands linked and unable to adjust the time independently from each other. Must use the bezel for 2nd timezone 16710 - Non quickset date, but has hour-hand "jump" feature so the hour/24 hour hand are independent of each other. It is not necessary to adjust the bezel for 2nd timezone if not wished. Both have strengths/weaknesses for having their individual features, and one is not necessarily better than the other. I love both of mine.
