Good news is you can get Belgian beer at some of the better US supermarkets (eg Whole Foods). There is a local Brewery called 'New Belgium' that does a very good imitation. I like their 'Abbey' beer which is a Dubbel style that is 8%.

I envy the California weather you will be getting, not to mention the beautiful landscape. Texas is uninhabitable outdoors for 6 months. Way worse than a European winter.

Been for 2 years in Dallas years ago for my flight training

So I have seen a lot of Texas

Had a really great time there . . .

Loved the sandwiches at Eatzi's . . .

From New Belgium I tried the Fat Tire . . . a good beer
