For an EPIC tasting/pairing! Red wines (mexico) with gourmet chocolate!

Rosemary and chocolate paired with a beautiful mexican Sang was THE highlight!!!!

But after a chocolate-wine pairing...well, I crave for a nice dinner. So a beautiful Mariatinto (viva Mexico!) with vacio...ahhhhhrghhhh!!!! amazing!

I am missing my cigar, but great times are coming up!

Gerardo, I don't think I have commented on your threads before, but can I just say thanks for your efforts. I enjoy them completely, but I was intrigued when I saw the shot of the cork.

We don't see cork very often here in Australia as we have "moved on" mostly to screw-top's due to the TCA issue. We have managed to overcome the psychological association between screw top wine and cheap wine. Most Australian wine producers use screw top now. Our screw tops are even designed to allow a similar trace amount of oxygen to get to the wine as that which cork allows. Is there a perception in Mexico that Screw top = Cheap?

Unfortunately yes, there is that perception so wineries here stay away from it. I have seen several wineries from the US and Argentina that changed from cork to screw and people do not buy the wine anymore!
