Some Cheese with that wine...

Hi guys,

I have a little question, hoping to inquire and get some information on cheese. There are only a small handful of ordinary cheeses that i like. My favorite is a sharp yellow cheddar. If you've ever eaten a sharp cheddar with sweet, Honeycrisp and in-season ripe apples you'll know why. I like a nice swiss, mozzarella, Colby-jack, parmesan. The "fragrant" cheeses i have a problem with. But there is one cheese i'm keen on trying.

Mimolette. I've done my bit of reading. I find this cheese interesting and would like to try it. I've found a place where i can buy online, but not in town anywhere.

My question is that who's tried this cheese and could you describe it? I don't drink wine regularly, but i'd also like to inquire what wine would go good with Mimolette? I've read that dark ales are good with this and bourbon and scotch beer. Don't know about that, but i'd me more accustomed to a bourbon or scotch accompanied with the cheese.

I have no information about Mimolette, but I love cheddar on a fresh apple.

Maytag Blue cheese
Imported D.O.P. Parmigiano-Reggiano, from Parma of course
White cheddar, sharp, same as yellow but yellow is colored with additives

Add some Prosciutto, spicy salami, and green apples with cantaloupe and you got a nice cheese tray for wine tasting

I love pepper Jack too and in Brasil there's a cheese called Prima-Donna. Very good and it's Dutch

Mimolette Cheese is soft to hard depending on the age and very orange colored cheese from France. So a Chanti would be good. Actually you could drink a Riesling all the way to Chateauneuf-du- pape depending on the age of the Mimolette.

Provolone is my favorite. Either sharp or xtra sharp. Have it with some prosciutto, capicola, a melon or just by itself with a glass of wine

It's the name i think, is what i like about the cheese the most. Mimolette, it sounds cool. From the reading that i have done, the flavor of the cheese can be very nutty, almost like hazel nuts they say. But no less, i'll pick up a reasonable bottle of Chianti(wine isn't my strong point) when id do find a source for mimolette.

Provolone is a good one as well. I enjoy that melted on pepperoni more than mozzarella. And a nice, sharp chunk of cheddar with small, cold Jonathan Apples is the way to go.
