Regarding a GMT II: You don't really set the 24 hr hand when you are "not traveling or not using the feature".

The 24 hr hand is the primary hand and it is set first where it almost always stays; usually to a zone you want to monitor at all times or as a base reference time. Changing the 24 hr hand requires you to stop the watch and re-set the entire works; this is not really practical. It is the jump (local) hour hand that is changed as you travel through time zones

Thanks Larry for the explanation. I would like to clarify my understanding. For example, I am in HK, both the 24hr hand and local hr hand are set to HK time zone. If I travel to US, then I need to set the local hr hand to US time zone. Am I right? It means that the 24hr hand and local hr hand are overlap when I am not traveling.

This is how a dual time watch is generally used..

If you do want to reference another time zone you can offset the bezel and use the 24 hr hand without stopping the watch. This is a feature that is always available.

I only use the feature when I travel. All my family is stateside so there is no real need to set the 24 hand.

I work in aviation. Sure, there are lots of clocks set to UTC where I work, but I still set the 24hr hand to UTC/GMT.

GMT hand to Zulu, jump hands and bezel for local/3rd time zone. This allows for ease of changes between zones and main reference point.

That's what's great about the GMT, so many ways to set and use it!

I'm an airline pilot. I set the GMT hand to GMT. Very helpful at work when in the crew room or at the gate reviewing paperwork. When I'm in another time zone I rotate the bezel so local time is indicated by the GMT hand's relation to the bezel. That way I don't have to fuss with quick setting the hand. That's how some 747, 707, and Constellation guys I know from PanAm and Northwest used their older GMTs. I'm not sure that's what Rolex intended but it makes sense.
